Announcement to anyone reading, we’ve found our new favourite pizza joint. This little spot in Erskineville served the most authentic Italian pizzas we’ve ever had – even better than some of the ones we had in Rome ðŸ¤.
The dough was soft and chewy, having been kneaded with the right amount of flour and water to give it an airy texture. It was cooked in the oven for a minute or two, giving it this crispy charred crust. And the toppings were high quality ingredients, kept to a minimal. We could even taste the olive oil used in the dough, enough to taste but not enough to ruin the texture of the pizza. It was delicious.
